What makes this product “pure”?

To be classified as “Pure” that pure vanilla extract must contain 13.35 ounces of vanilla beans per gallon of liquid and be 35% alcohol. The agency also limits the permissible ingredients beyond beans and alcohol. We use the “Pure” classification because we only use all-natural ingredients and follow FDA guidelines for creating our extracts.

Why is there sugar in the extract?

Sugar is one of five permissible ingredients the FDA allows in pure vanilla extracts. It helps in the extraction process by keeping the extracted vanilla compounds in suspension, aiding in product clarity. We use 100% all-natural, crystalized cane sugar for its reliable quality and taste. The sugar content in our extract makes up less than 5% of the finished product, an amount that is nutritionally insignificant when a small quantity is added to a dish. We do not add any extra sugar after the extraction process.

What is the origin of this vanilla?

Our Tahitian Pure Vanilla Extract is made from premium, hand-selected beans cultivated in Tahiti, and is a favorite of pastry chefs around the world due to its unique flavor profile and proficiency in cold applications.

What kind of recipes are best for Tahitian Pure Vanilla Extract?[RL1]

Because Tahitian vanilla is very susceptible to heat, Nielsen-Massey’s proprietary cold extraction process is the ideal way to preserve its unique flavor compounds. Tahitian Pure Vanilla Extract is best used in refrigerated and frozen foods, where it adds a delicious and delicate vanilla flavor.

How does the flavor differ from your Madagascar Bourbon Pure Vanilla Extract?

Tahitian Pure Vanilla Extract is a fruity, floral flavor with notes of cherry and almond whereas our Madagascar Bourbon Pure Vanilla Extract has a sweet, creamy and mellow flavor.

Product Description

At Nielsen-Massey Vanillas, we've been crafting the world’s finest pure and natural vanilla products since 1907. Our focus on quality begins by sourcing Grade A premium gourmet vanilla beans from our network of trusted suppliers in the world’s best regions for vanilla growing. Our team closely examines each bean to ensure it meets our exacting quality standards, often rejecting more than we purchase.

We hand-select the highest quality whole vanilla beans from Madagascar so you can add gourmet vanilla flavor to all your favorite recipes. Nielsen-Massey Madagascar Bourbon Vanilla Beans have a flavor profile that is full, sweet, creamy and mellow with velvety after tones. The vanilla seeds add visual appeal to a variety of applications, from cooking to baking as well as cold and frozen desserts.

Cooking or baking with whole vanilla bean pods is an excellent way to add the full complex range of vanilla flavor to your favorite recipes. To prepare a vanilla bean for use, do the following:

1. Split the bean in half by slicing a slit in the bean from one end to the other. 2. Spread the bean apart to expose the seeds and scrape them out with the dull side of the knife. 3. Scrape the beans off the knife and into a small dish, then repeat with the other half of the bean.

Vanilla flavor is found in both the bean and the seeds, so you can use both depending on the application. For example, you can boil the scraped bean in milk or heavy cream to extract the flavor or place it in a jar of sugar to create vanilla flavored sugar. If the bean still possesses its characteristic aroma and is moist and pliable, you can rinse, dry and use it again. One whole vanilla bean is equivalent to one tablespoon of vanilla extract, vanilla bean paste, or vanilla bean powder.

Other applications include:

• Sweet: crème brûlée, custards, puddings, yogurt, gelato, ice cream

• Savory: glazes for poultry, seafood and pork

• Beverage: sangria, cream soda floats, amaretto sour

• Other: natural car deodorizer
